New Head Chef, New Executive Chef

Matt and Kate Harvey have firmly settled into Wild Canary with many plans underway. The past few months since August, when they took over the lease, has been about consolidation and improving ‘back of house’ like getting the acoustic issues addressed and ramping up the air-conditioning.

Kate and Matt Harvey have run a stable of successful and busy restaurants in Brisbane for two decades, with the kitchen garden, open spaces and room to move they have lots planned.

The first significant change is to elevate Chef Glen Barratt into an Executive Chef role and appoint Blake Mickelbourgh as Head Chef.

Blake has been with us for sometime. He is an accomplished chef and has known and worked with Glen before at Restaurant Two. Born in Chinchilla, he has done stints in Napa Valley California and Vue de Monde in Melbourne, plus he drives a Red FJ 1954 UTE. It’s a fabulous opportunity that maximises the talents of both.

Glen and Blake also share a similar taste and side passion for vintage cars, this compliments their shared philosophy of food. The staff car park is a bit 1950’s!

As Executive Chef, having the time out allows Glen to get into our country regions and down the dusty tracks in search for the best farmers and produce from around South East Queensland. Then bring these produce treasures back to the kitchen. Glen is born for the open road, cruising in his 1950 Black FX Holden, we know these trips are tremendously beneficial for farmers and producers medications from Health Canada Pharmacy not just Wild Canary. They appreciate the on going dialogue and feedback with professionals. We wanted to formally acknowledge this contribution and give him the space and time to do it.

Wild Canary is building a reputation through the Producer Lunch series as a place where Brisbane hospitality can find out about new exciting produce and hear stories direct from the farmers.

Wild Canary is kicking off with a full calendar of Producers Lunches, focusing on the different regions that all have distinct climate, soil and food production culture. Plus launching a new event on Sundays ‘Sunday Sessions‘ a more relaxed family affair and an extension in trading hours to 6pm.

Glen does love a good pastry session, his botanically decorated cakes are an Instagram hit, you will still find him in the kitchen making these beauties when he’s completed another trip down a dusty lane. Cakes are available for pick up for private events or order ahead for any of your special events at the bistro.

Filming today

Channel 7’s the Great South East are filming today at Wild Canary. Chef Alastair McLeod was given a full tour of the kitchen garden by our head Chef Glen Barratt. Absolutely perfect weather for it! Looking forward to the show!
