Given its rich dark chocolate appearance, this gluten free cake is surprisingly light. The quinoa gives it lovely texture and works well with a dollop of fresh cream. This cake can be finished with a simple dusting of cocoa or can be transformed into a decadent dessert with chocolate ganache and seasonal berries.
